Simple Avocado Chicken Salad for Lunch!
The other day for lunch I had no idea of what I wanted to eat. I wasn’t feeling a smoothie or sandwich, which is what I eat on a typical day. I really enjoy chicken salad and wished I had a tub of it at that moment. Then I remembered that the main ingredients are pretty simple – chicken and mayo. I had some leftover rotisserie chicken from dinner the night before and thought, why not? I looked up a recipe but unfortunately didn’t have all of the ingredients. Therefore I decided to try my own spin on the famous chicken salad. I based my simple recipe on the one from Just a Taste. This simple avocado chicken salad for lunch is both healthy and tasty! It only requires a few ingredients and takes minutes to make!
Simple Avocado Chicken Salad for Lunch
- 3.5 cups chopped chicken
- 1 avocado, pitted
- 1/3 cup olive oil mayo (healthier than egg-based mayo)
- 2 teaspoons honey Dijon mustard
- 1 tablespoon lime juice
- Firstly, pit your avocado and mash it in a large bowl.
- Next, add the chicken, olive oil mayo, mustard, and lime juice.
- Mix well.
- Lastly, serve on bread as a sandwich, or on a bed of spinach.
This recipe yields 4 servings at about 269 calories per serving. Each serving contains 20g of protein, 10g of fiber, 1g of sugar, and 19g of fat.
