Easy Peasy Chocolate Energy Bites Recipe
During quarantine, I was playing around with ingredients in my kitchen and ended up creating a delicious combination. My love for chocolate and fitness fueled my creative effort to make energy bites. Initially, I had a recipe pulled up a recipe that used oats, which I didn’t have at the time. I opened my pantry and pulled out all of the ingredients that I thought would taste good together. Subsequently, I discovered an alternative easy peasy chocolate energy bites recipe.
Ingredients
- 1/2 cup of almonds
- 1/2 cup of cashews
- 2 tbsp chia seeds
- 1/2 cup of chocolate chips
- 2 1/2 tbsp honey
- 1 scoop chocolate protein powder (I use Orgain vegan protein powder)
- 1/4 cup peanut butter (or almond butter)
- 1-2 tbsp water
Directions
Firstly, crush the almonds, cashews and chocolate chips in a food processor or blender. In a bowl, combine the chia seeds, honey, protein powder, peanut butter and water. Then, mix the nut mixture into the bowl with the other ingredients. You may have to mix this with your hands. Lastly, shape the mixture into 1-2 inch balls and place them on a pan in the refrigerator to chill. When shaping the mixture into balls, it helps to dampen your hands so the ingredients stick together.
