Ingredients

This recipe makes about 3 servings!

  • 2 medium ripe bananas
  • 2 eggs
  • 1/2 cup milk of your choice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oats (instant or rolled)
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Oil for cooking (the healthiest include olive oil or coconut oil)

Directions

  1. Firstly, add all of the ingredients to a blender and blend until completely smooth
  2. Next, coat your pan or griddle with oil and heat on medium
  3. Once the pan is hot enough, add about 1/3 of the batter, or as much as you’d like depending on how big you want to make the pancakes
  4. Then, cook until the pancakes slightly puff up and you see a few bubbles along the edge
  5. Flip the pancakes and cook until both sides are golden brown. If your pancakes are burning or the pan is smoking, turn the heat down.
  6. Lastly, serve with berries and syrup for the ultimate tasty breakfast.
