Dairy-free spinach and artichoke chicken breasts

So, in all honesty, I found the inspiration for this recipe in a Tik Tok video, and thought, “Boy, this looks good!” At most family gatherings, whether it’s Christmas or Easter, someone brings spinach and artichoke dip. It is definitely one of my favorites, which is why I wanted to share a way you can enjoy it as your main course! This recipe for dairy-free spinach and artichoke chicken breasts is from Simply Whisked.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 15-ounce can of chopped artichoke hearts (1 ¾ cups)
  • 1 tablespoon minced garlic
  • ¼ cup plain hummus
  • ¼ cup olive oil-based mayonnaise
  • ½ cup Panko breadcrumbs
  • 1 tablespoon lemon juice
  • 4 boneless, skinless chicken breasts
  • Salt and pepper

Directions

  1. Firstly, preheat your oven to 400 degrees F
  2. In a mixing bowl, mix the spinach, artichokes, garlic, hummus, mayo, breadcrumbs, and lemon juice until combined
  3. Then, carefully cut into each chicken breast lengthwise down one side. Make sure to not cut all the way through the breast
  4. Stuff each chicken breast with 3 – 4 tablespoons of the spinach artichoke mixture, and if needed, secure with toothpicks.
  5. Season the outside of the chicken breasts with a generous amount of salt and pepper.
  6. Heat a large, cast-iron skillet to high heat and add the olive oil. Sear the chicken until golden brown, about 4 minutes on each side.
  7. Transfer the chicken to the oven and continue cooking for around 20 minutes or until the chicken and filling reach 165 degrees F.
  8. Lastly, remove the toothpicks and enjoy your dairy-free spinach and artichoke chicken breasts!
